To prepare muffins, you will need two hundred grams of wheat flour, one teaspoon of baking powder, half a glass of oatmeal, eighty grams of brown sugar, a pinch of salt, two hundred ml of milk, two chicken eggs, sixty-five grams of butter, fifty grams of natural yogurt, two hundred grams of frozen cranberries , two teaspoons of lemon zest, half a glass of crushed walnuts, a little spice - ginger, cloves and nutmeg, four tablespoons of lemon juice, two tablespoons of honey, two tablespoons of powdered sugar.

Cranberries are defrosted, and the resulting juice is drained. The butter is melted using a water bath. Mix flour, oatmeal, sugar and salt. In another bowl, eggs are beaten together with milk, yogurt and melted butter are added there. After that, the mixtures from the two containers must be combined together. Cranberries, lemon zest, nuts and spices are carefully mixed into the resulting mass. The dough is poured into molds for cupcakes (or muffins), they need to be filled by two thirds. Muffins are baked at an oven temperature preheated to one hundred and ninety degrees. Baking time is twenty-five minutes.

After the muffins are removed from the oven and left to cool, you need to prepare the glaze. To do this, lemon juice and honey are mixed, everything is heated and powdered sugar is poured into it. The mixture is brought to a boil, cooled slightly, and then the cooled muffins are smeared with it.

Among homemade preparations that housewives can please their loved ones, there is such a recipe as cranberries with orange. This is an original and tasty dish that has an unforgettable aroma and unusual color.

Curd with cranberries

Sometimes you want to treat yourself to cottage cheese, but not in a simple combination: cottage cheese - sugar - sour cream, but with something unusual. Cottage cheese with cranberries will be the original sour-milk dish that gourmets will like.

Curd with cranberries is very easy to make. The required amount of sugar (to taste) and sour cream are added to a serving of cottage cheese. Half a kilogram of cottage cheese, three eggs, three tablespoons of sugar, five tablespoons of semolina, one teaspoon of vanillin and one tablespoon of cranberries are taken.

To prepare the casserole, the egg whites are separated from the yolks. After that, the proteins are knocked together with salt with a mixer until a good density. Yolks, cottage cheese, sugar, semolina and vanillin are ground together to a thick, homogeneous mass.

Cranberries are washed and dried, and then added to the curd mixture. After that, whipped proteins are carefully introduced into the dough. Then the dough is laid out in a baking dish, which was previously greased with butter. The form is placed in the oven, which was heated to a temperature of one hundred and eighty degrees and left there for forty-five minutes until the casserole is fully cooked.

  • at the very end, the jam is poured into a prepared jar,
  • from the recommended amount of ingredients, approximately three hundred milliliters of dessert is obtained.

Salad with cranberries

There are a sufficient number of recipes for salads with cranberries: both vegetable and fruit. Cranberry salad is always an unusual dish with an interesting taste. Here is one recipe for vegetable and fruit salad with the addition of northern berries.

Recipe number 1 - a salad of pumpkin, cranberries and seaweed.

To prepare the salad, you will need one hundred and ten grams of cranberries, two hundred and forty grams of seaweed, one hundred and seventy-five grams of pumpkin, a little dill, salt and spices to taste.

The pumpkin is cut into cubes, the seaweed is chopped, the dill is torn into small pieces. The berries are kneaded with a mortar. All ingredients are mixed, spices and salt are added to them, if necessary. The salad is chilled before serving.

Recipe number 2 - fruit and berry salad.

You will need to take two and a half tablespoons of cranberries, four hundred and twenty-five grams of apricots, half a glass of walnuts, two tablespoons of orange peel, sugar, a third of a glass of cranberry juice.

Apricots must be washed, dried, pitted and cut into slices. Nuts are ground in a blender, like orange zest. Cranberry juice is mixed with sugar. All ingredients are mixed and seasoned with sweet cranberry juice.

You can dry such homemade “sweets” both in the oven and in an electric dryer. And most importantly, there is no need for long-term storage of cranberries in sugar. It can be cooked a little from time to time so that it does not have time to get bored.

Ingredients:

  • 2 cups fresh cranberries;
  • 1 egg (we use only protein);
  • 1 glass of powdered sugar.

Cooking:

Wash the cranberries, sort them out, lay strong whole berries on a paper towel to dry. Sprinkle the powdered sugar in an even layer on a large dish. Whisk the egg white in a bowl. Dip each berry into the beaten egg white, then roll well in the powder. A sweet white ball should turn out from a berry in a protein and sugar shell :) Dry these balls first at room temperature (for an hour or two), then place the cranberries in the oven or electric dryer. Both fresh and frozen berries are suitable for making jelly. And yes, you can use regular potato starch. I don’t see the need to look for a more expensive corn one. The starch variety does not affect the taste of the finished cranberry jelly.

Ingredients:

  • 450 grams of cranberries;
  • 3 liters of water + 2 cups for preparing a starch solution;
  • 1 cup of sugar;
  • 6 tablespoons starch.

Cooking:

Wash and sort cranberries. Broken ones can be used, rotten ones cannot. If you have a frozen berry, first defrost it, then remove obviously spoiled specimens and you can proceed further. Using an immersion blender, grind the cranberries, then rub them through a metal sieve. Leave the resulting juice for now, and pour the berry cake with drinking water. Put on the stove, after boiling, add sugar and cook for 10 minutes. Strain the broth through a thick sieve, discard the cake, and boil the broth again. Dissolve the starch in two cups of water, pour it into the pan in a thin stream, stir to prevent lumps from forming. As soon as the jelly boils, pour in the cranberry juice, remove the pan from the heat and cool under the lid. You can store jelly for 1-2 days in the refrigerator.

Cranberry juice

The preparation of fruit drinks differs from the jelly recipe only in that less sugar is added to it and no starch is added at all. Let's take a closer look at how to cook cranberry juice.

Ingredients:

  • 4 cups of cranberries;
  • 2 liters of water;
  • half a cup of sugar or a little more.

I do not advise you to make the drink too sweet. Sweetness will reduce all his dignity to zero. Instead of sugar, you can add honey to taste in a chilled fruit drink.

Cooking:

Sort the berries, rinse them, pouring them into a colander, then put them in a saucepan and mash with a wooden crush. Wipe through a sieve (as an option, squeeze, wrapping the berry mass in four-fold gauze). Put the resulting juice in the refrigerator, and pour the cake with water, putting it in the same pan where you kneaded the berry a moment earlier. Bring to a boil, stir well, then strain and bring back to a boil. Add sugar to the pan with berry broth, stir it until completely dissolved. Wait for the boil, after 3-4 minutes remove the future fruit drink from the heat, and after half an hour pour cranberry juice from the refrigerator into it. Cranberry and lingonberry compote

Of course, these berries are similar. So similar that you can cook compote from cranberries alone, and do not add lingonberries. And yet I will give you a recipe for making cranberry and lingonberry compote.

Ingredients:

  • 2 cups of cranberries;
  • 2 cups of lingonberries;
  • 3 liters of water;
  • sugar to taste;
  • cinnamon stick optional.

Cooking:

Rinse the berries, discard all rotten, unsuitable for processing. Put the rest in a saucepan and cover with water. Cook after boiling for 20 minutes with a cinnamon stick, then add sugar to taste. Pull out the stick, strain the compote, discard the berries. Bring the compote to a boil again and let it brew under the lid.

Cranberry juice

Cranberry juice is very useful, especially in the cold season. It contains a number of substances that strengthen the immune system and help the body fight viruses. To prepare cranberry juice for the winter, you will need a fairly large number of berries.

Ingredients:

  • 4 kg of fresh cranberries;
  • 4 glasses of water;
  • sugar to taste.

The juice can also be preserved as a concentrate (without water), but in this case it will need to be diluted before drinking due to the high acid content of the product.

Cooking:

Sort the washed fresh berries, chop them with a blender, heat until almost boiling, stirring, then rub through a sieve. Pour the juice into a saucepan, heat almost to a boil. Boil the required amount of water separately, remove from heat and cool slightly. Pour a little chilled boiled water into heated cranberry juice. Add sugar, stir until dissolved, bring to the first signs of boiling and pour into sterile jars. Roll up and turn the jars upside down. Additional processing is not required.

The season for making tinctures, as a rule, begins immediately after the wine-making season. Among the many excellent recipes, cranberry tincture stands apart. Klyukovka on vodka or alcohol is the most popular among others. And this is not surprising. The wonderful taste and ease of preparation of cranberries makes lovers of liqueurs and liqueurs return to this recipe year after year. This tincture is prepared from fresh or frozen berries. The result invariably pleases everyone who has tried cranberry vodka at least once.

Ingredients:

  • 1 glass of cranberries;
  • 2 tablespoons of granulated sugar;
  • 50 ml of water for making syrup;
  • 2 glasses of any vodka.

Cooking:

Clean the cranberries from debris, sort, rinse under the tap. Place in a colander to drain excess liquid. Crush the berries with a wooden pusher, put in a container for making tincture and fill with vodka. It can be a bottle with a cork and a wide neck. Mix by gently shaking the bottle, seal tightly, leave in a warm, dark place for 2 weeks. After passing through this stage, open the tincture and strain through cheesecloth several times. For finer cleaning, it is advisable to use a cotton filter: place cotton wool between two layers of gauze and pass cranberry tincture through it. You can stop at this - the tincture is ready for use. If it seems very sour, you can add 2 tablespoons of sugar (no more). But dissolving sugar in the tincture is not directly desirable. It is better to initially dissolve granulated sugar in hot water, thereby preparing a syrup, and only then mix it with cranberry tincture on vodka.

Cranberries pureed with sugar

Cranberries mashed with sugar retain all the beneficial properties of fresh berries, because cooking is not provided for in this recipe. A sufficient proportion of sugar in relation to the berry for reliable storage is 1:1.

Ingredients:

  • 2 kg fresh cranberries;
  • 2 kg of granulated sugar.

Cooking:

Berries, as usual, sort, rinse and dry. Then put them in a container convenient for grinding, turn them into a homogeneous puree with an ordinary blender, add sugar and mix until dissolved. The mixing spoon should be wooden. Pour boiling water over it before stirring the sugar into the cranberry mass. Separately, pour boiling water over clean jars and lids. Place the mashed cranberries in jars, close them with lids, after half an hour, when the glass has cooled well, put the glass containers in the refrigerator. Pureed berry mass with sugar will also be perfectly preserved frozen.

Jam from cranberries

I cook cranberry jam with the addition of apples. So it's actually cranberry-apple jam.

Ingredients:

  • 2 cups fresh or frozen cranberries
  • 1 kg of apples;
  • 1 kg of sugar;
  • lemon or orange zest, optional

Cooking:

Defrost cranberries if using frozen berries. Fresh enough to wash and sort out. Pass them through a meat grinder, then wipe through a sieve. Finely chop the apples, sprinkle with sugar, mix, add the berry mass. Now you can start cooking. Heat the fruit and berry mass over medium heat, cook until the apple slices soften, remembering to stir it all with a wooden spoon. When the apples begin to boil, remove the future jam from the fire. Stir, cool slightly and blend thoroughly with an immersion blender. As soon as there is a homogeneous fruit and berry mass in the pan, start cooking it again. Now this must be done, focusing on the signs of jam thickening. Be careful - during the cooking process, the cranberry-apple mixture "spits" hot, so take care of your hands and do not forget that the thickening jam must be stirred constantly, without interruptions. Otherwise it will burn. Before removing the finished product from the heat, add orange (preferably) or lemon zest to it to taste. Stir again, wait for a new boil after adding the zest and spread the cranberry jam into clean, dry jars, previously washed with hot water. Roll up with sterile lids. Due to long cooking, the workpiece is perfectly stored and additionally thickens during storage.

Fresh cranberry jam five minutes

Ingredients:

  • 1 kg of cranberries;
  • 800 grams of sugar;
  • 2 glasses of water.

Cooking:

To make cranberry jam for five minutes, rinse and sort the berries, then leave them to dry on a paper towel. In the meantime, boil sugar syrup from two glasses of water and eight hundred grams of sugar. When the syrup boils, boil it for 5 minutes. Then pour the berries into the saucepan with syrup, bring to a boil again and leave to rest for half an hour. Waste no time in vain, process jars and lids. Bring cranberries in syrup to a boil over medium heat, cook for 5-7 minutes, pour five minutes hot into storage containers and roll up.

Frozen Cranberry Jam with Orange Juice

A fairly popular winter dessert recipe, because in the cold season there is no shortage of oranges and frozen cranberries.

Ingredients:

  • 2 cups frozen cranberries;
  • 1 cup of sugar;
  • 1 large ripe orange

Cooking:

To cook this delicious dessert jam, defrost the berries and sprinkle them with granulated sugar. Leave for an hour, then wash the orange, squeeze the juice out of it and add to the jam bowl. Stir, bring the sweet cranberry mass to a boil, cook over low heat for half an hour. Pour the boiling jam into a clean jar, close with a nylon lid, when it cools down, place in the refrigerator. A few spoonfuls of this jam for tea is an excellent vitamin addition to the diet. Another way to make jam from frozen berries is as follows: after defrosting cranberries, twist them with sugar, add orange juice and cook until thickened. Pour into jars, close with clean lids.

Cranberry Marshmallow

Slight cranberry sourness, moderate sweetness, fluffy, airy texture - this is exactly what you expect from a treat called marshmallow. Want to make cranberry marshmallows at home?

Ingredients:

fruit base:

  • 150 grams of applesauce;
  • 50 grams of cranberry puree;
  • 200 grams of sugar;
  • 1 egg white.
  • 80 ml water
  • 220 grams of sugar;
  • 10 grams of agar agar.

Cooking:

Make the applesauce first. Cut the apples in half. Remove the middle and peel the peel, cut each half into 2 more parts. Place the apples in a baking dish. Bake in the oven for 1 hour at 160ºС. Cool the baked apples. Blend them with an immersion blender and pass through a sieve.

Prepare cranberry puree. Blend washed, selected cranberries with an immersion blender. Pass the berry puree through a sieve to get rid of the skin.

Now you can cook the marshmallow itself. Mix applesauce with cranberries. Add sugar, mix thoroughly. Mix apple-cranberry puree with half the protein and beat with a mixer. When the mass increases in volume and brightens, add the remaining half of the egg white and continue beating for a few more minutes.

In a saucepan, mix water and agar-agar. Put the pan with the agar solution on a slow fire. When the agar-agar swells and the mass begins to thicken, add sugar. Mix thoroughly. Cook the syrup over medium heat to 110°C for about 5 minutes. Pour the hot syrup into the whipped fruit base. The mass will increase in volume and begin to thicken. Beat after that for about 5-7 more minutes.

While the marshmallow base is being whipped, prepare the parchment on which you will place the marshmallow, a pastry bag with a nozzle. For this amount of products, I needed 2 large pastry bags. When the marshmallow mixture was ready, I filled both pastry bags at once so that while I deposited the first batch of marshmallows, the remainder did not start to set in the mixer bowl. This is important because agar-agar begins to solidify already at 40 degrees.

Leave the marshmallow overnight to dry out a bit. Sprinkle with powdered sugar. If desired, you can connect the halves of cranberry marshmallows.

To prepare it, the berries are washed in boiled water and the juice is squeezed into porcelain or glassware. The pomace is poured with cold water at the rate of 3-4 liters per 100 g, boiled and filtered. Squeezed juice and sugar (to taste) are added to the resulting broth. Stored in the refrigerator. It is useful to consume fruit drinks 2-3 glasses a day, warming to room temperature.

Kissel cranberry

Take 100 g of berries, 3-4 tbsp. l. sugar, 1 tbsp. l. starch and 3 cups of water. Rinse the berries with cold water and rub them with a wooden pestle. Separate the berry juice and put it separately. Place the rest of the crushed berries in a saucepan and cover with hot water. Bring the broth to a boil and cook for five minutes. Strain it through a sieve. Add granulated sugar to the broth, heat to a boil and remove the foam from the surface.

Dissolve starch separately in a small amount of cold water. Pour the starch into the boiling compote in a thin stream, stirring it continuously. Bring the jelly to a boil. If you want to get a thicker jelly, the amount of starch needs to be increased. At the very end, you need to add the previously squeezed cranberry juice to the jelly. Pour the finished jelly into glasses.

The drink is ready! Kissel is a very nutritious, high-calorie dish due to its starch content, it retains many vitamins.

Cranberry Sauce

Take a pound of fresh or frozen cranberries. Place it in a small enamel saucepan, add 50 ml of water, 200 g of sugar, a pinch of ground allspice and about a third of a teaspoon of chopped nutmeg. The resulting mixture must be brought to a boil over very low heat (10-15 minutes), and then cook the sauce for another 5-7 minutes, stirring continuously. Remove the pan from the heat when you see that the berries have become soft and began to intensively secrete juice. Then set the pot aside to cool.

Peel the orange and squeeze the juice out of it, which is poured into the cooled cranberry mixture, mix everything thoroughly and put the sauce back on the fire, bring it to a boil and cook for at least five minutes. You can add a couple of teaspoons of crushed orange zest to enhance the taste. Throw another five minutes of cooking on top of the zest.

It remains to cool the sauce slightly and beat with a blender until a homogeneous mass is obtained. Pass the sauce through a sieve. In finished form, it should have the consistency of sour cream. Butter-fried chicken breasts, baked rabbit, pork chops, stewed fish - the sauce goes with everything.

Cranberry-apple chutney (spicy sauce for baked pork, turkey)

You will need onion, finely chopped (0.5 cup), garlic, minced (1 clove), ginger, grated (1.5 tablespoons mixed with garlic), apple cider vinegar (1 cup), apples, peeled and chopped (3 cups), red bell pepper, seeded and chopped (1 pc.), Brown sugar (1 cup), mustard seeds (1 tbsp), allspice (0.5 tsp), cayenne pepper (0.5 tsp), dried cranberries (200 g) and salt (0.5 tsp).

Blend the onion, garlic, and ginger with 1/2 cup apple cider vinegar in a blender. In a large saucepan over medium heat, simmer all ingredients except the cranberries until the mixture thickens. Throw the cranberries into the saucepan and simmer for another 15 minutes.

Chutneys can be refrigerated in sterilized jars and sealed with lids. This kind of sauce can be eaten simply by putting it on dried bread, and as an addition to cold meat, poultry. A complete and very tasty meal.

Chicken breast stuffed with cranberries with cranberry sauce

You will need: 3 chicken fillets, 0.5 cups of cranberries, 2 tbsp. l. honey, 2 tbsp. l. with a slide of ground crackers, 2 tsp. butter, salt, egg, flour, ground crackers for breading. For sauce: 1 tbsp. l. starch, 0.5 cup cranberries, 2 tbsp. l. honey

Beat the fillet into a large pancake (beat off, wrapping it in a film so that the fillet does not tear).
Salt, pepper, put 1 tablespoon of the following filling: mix softened butter with cranberries, breadcrumbs and honey.

Roll the fillet in the form of a Kyiv cutlet. Breaded in flour, egg, ground breadcrumbs.
Fry quickly on both sides, until golden brown. Place in the oven and bake at +220 degrees for 20 minutes.

Squeezed juice is poured into this sugar-gelatin syrup, then the mixture is filtered, cooled to 15-20 degrees and poured into molds. For 150 g of cranberries - 150 g of sugar, 30 g of gelatin. For syrup: for 100 g of sugar 50 g of cranberries.

Cranberry tincture ("Cranberry")

Vodka - 0.5 l; sugar - 1 glass; cranberries - 1.5 cups.

Crush cranberries with sugar and place in a jar (1l), then pour the mixture with vodka. Close the lid (you can use polyethylene) and hide in a dark place where room temperature is maintained for two weeks. Shake the liquid once every two days.

After 14 days, hide the jar for one night in the refrigerator. After the settling process, strain the resulting drink through a four-layer gauze, carefully squeeze the cranberries.

This version of "Klyukovka" is perfect for men, and a light version is recommended for ladies. Make syrup from 2 cups water and 2 cups sugar. Pour the cooled syrup into the "male" version, slightly diluting the strong drink. It is not necessary to pour all the syrup at once. Add it little by little and taste the drink.

Consume Klukovka carefully, as the high alcohol content is practically not felt on the palate, and the tincture is drunk like a rich fruit drink. Don't get carried away.

Cottage cheese cranberry ice cream

You will need: cranberries (225 g), sugar (225 g), 5% cottage cheese (450 g), 35% whipping cream (400 ml), honey (2 tablespoons), chopped almonds or chopped walnuts ( 3 tablespoons).

Rinse cranberries, dry on a towel. Add half the sugar. Crush the berries with sugar into a soft pulp. Add the second half of the sugar to the cottage cheese, beat with a mixer until creamy. Combine cranberries and cottage cheese with sugar. Mix well. Whip the cream into a thick foam. Stir in cranberry curd cream.

Take a pudding mold (with high sides) and grease the entire inner surface of the mold with honey. Sprinkle with chopped almond crumbs (peeled and planed "petals" of almonds) or walnut crumbs. Pour the cranberry cream into the mold.
Cover with cling film and place in the freezer for 4-5 hours.

Before serving, immerse the form for a few seconds in hot water and turn the contents onto a dish. You can decorate with whipped cream and berries.
